  1. Open the young coconuts: pierce the soft eye or crown, drain the coconut water through a fine-mesh strainer into a bowl, and carefully split to scoop out the tender meat; trim off any hard or brown bits.
  2. In a blender, combine the strained coconut water and coconut meat with the cold water, granulated sugar, and fine sea salt. Blend on high until very smooth and the sugar is fully dissolved, 45–60 seconds.
  3. Strain the mixture through a fine-mesh sieve or nut-milk bag into a pitcher, pressing until the pulp is mostly dry, 2–3 minutes. The liquid should be lightly cloudy and fragrant.
  4. Serve immediately over ice, or chill until cold (30–60 minutes) before serving. Stir before pouring as natural separation may occur.
