Ingredients
- 2 cups mayonnaise
- 0.5 cup apple cider vinegar
- 2 tbsp lemon juice – fresh
- 2 tbsp prepared horseradish – not creamy
- 1 tbsp sugar
- 1 tsp kosher salt
- 2 tsp ground black pepper
- 0.5 tsp cayenne pepper
Instructions
- In a medium bowl, whisk the mayonnaise, apple cider vinegar, and lemon juice until smooth and pourable, 30–60 seconds.
- Whisk in the prepared horseradish, sugar, kosher salt, black pepper, and cayenne pepper until evenly combined, 30–60 seconds.
- Taste and adjust seasoning to balance tang, heat, and saltiness; the sauce should be bright, peppery, and lightly hot.
- Transfer to a jar, cover, and refrigerate for at least 1 hour to meld flavors.
- Stir before using. Serve as a mopping or dunking sauce for smoked or grilled chicken, or as a table sauce for barbecue.
- Store refrigerated up to 1 week.
