  1. In a medium saucepan, whisk together ketchup, apple cider vinegar, water, brown sugar, molasses, hot sauce, Worcestershire sauce, yellow mustard, smoked paprika, garlic powder, onion powder, cayenne pepper, kosher salt, and black pepper.
  2. Bring to a gentle simmer over medium heat, then reduce to medium-low. Cook, stirring occasionally, 10–15 minutes until glossy and slightly thickened; the sauce should coat the back of a spoon.
  3. Remove from heat and let stand 5 minutes; it will thicken a bit more as it cools. Adjust to taste for heat, tang, and saltiness if needed.
  4. Use warm to coat hot, cooked wings (about 1–1.5 cups for 2–3 lb wings), or cool completely and refrigerate in a sealed jar up to 1 week.
