1. In a bowl, combine minced garlic, paprika, honey, yellow mustard, black pepper, salt, and olive oil; whisk or stir until evenly mixed to make the marinade.
2. Place the bone-in chicken thighs in a shallow dish or zip-top bag, pour the marinade over them, massage it into the chicken to coat, and refrigerate to marinate for 1 to 4 hours.
3. Preheat oven to 425°F (218°C). Arrange marinated thighs skin-side up on a parchment-lined sheet pan.
