Ancho chile powder is made from ripe poblanos that are dried until leathery and deep red-brown, then ground into a fine, mahogany-colored spice. It delivers gentle warmth (about 1,000–2,000 SHU) with notes of raisin, prune, cocoa, and subtle smokiness, making it one of the mildest and most versatile Mexican chile powders.
Cooks reach for ancho to add color, body, and layered sweetness to chili, stews, beans, moles, rubs, and marinades. It’s a single-ingredient spice—distinct from American chili powder blends that include cumin, garlic, and salt—so it slots cleanly into recipes without unwanted extras. Briefly toasting the powder in oil or a dry pan blooms its aroma; store airtight in a cool, dark place to preserve potency.
