Chow mein noodles are Chinese-style wheat noodles, sometimes enriched with egg or made with alkaline water (kansui) for resilience and a springy bite. Sold fresh or dried, they are designed to handle high-heat cooking and vigorous tossing. In Cantonese and American Chinese cooking they are briefly boiled then stir-fried; in Hong Kong–style preparations they may be pressed into a hot pan until the edges turn lacy and crisp while the center stays tender.
Thickness varies by brand; thinner strands excel at crisp pan-frying while medium gauges suit softer stir-fries. Cook just shy of tender, drain well, and toss with a little oil to prevent sticking before hitting a hot wok. Their neutral, wheaty flavor readily absorbs soy-based sauces, aromatics, and sesame oil, making them a versatile base for vegetables and proteins.
