Fresh turmeric root is the vivid orange rhizome of Curcuma longa, a member of the ginger family. Compared to ground turmeric, the fresh root is juicier and more aromatic, with a bright, earthy scent and a warm, peppery bite. Its signature color comes from curcumin and related curcuminoids, which lend both golden hue and gentle bitterness, while volatile oils provide citrusy and resinous top notes.
