Kirsch is a clear, colorless cherry eau-de-vie. It tastes dry and intensely aromatic with a subtle almond-like pit note, and it withstands heat for flambeing or deglazing; common uses include cocktails, soaking cake layers, and enriching cheese fondue. Bottles are typically 40–50% ABV and unaged.
Originating in the German-speaking regions of the Black Forest, Alsace, and Switzerland, kirsch is made by fermenting whole cherries with their stones and distilling the mash. It spread through Central Europe and French patisserie, where its clean cherry character is prized.
