Mortadella is a large, pale-pink pork sausage and deli cold cut studded with creamy white cubes of fat and sometimes pistachios. It tastes savory and gently spiced, with a silky, tender slice that folds without crumbling. Commonly served thinly sliced for sandwiches and antipasti, it also dices well for fillings, pizza, or quick pan-crisping; typically sold as pre-sliced rounds or whole chubs.
Developed in Bologna, Italy, mortadella spread throughout Italy and later to Mediterranean and Latin American cuisines. Producers emulsify seasoned pork with visible cubes of back fat, sometimes pistachios or peppercorns, then slow-cook the large loaves to set their smooth texture.
