Sanding sugar is a coarse, clear or colored granulated sugar with large, sparkly crystals. The crystals resist melting in the oven and keep their color, adding a crisp crunch and a glittering finish. Bakers sprinkle it on cookies, muffins, sweet breads, and frosted cakes, or roll dough edges before baking; it is sold plain and in a wide range of tints.
It developed within confectionery and industrial sugar refining, where larger crystal fractions are screened from standard granulated sugar; coloring is applied with food-grade dyes. It is common in European and North American baking traditions.
