Spicy BBQ wing sauce

Instructions

1. In a medium saucepan, whisk together ketchup, apple cider vinegar, water, brown sugar, molasses, hot sauce, Worcestershire sauce, yellow mustard, smoked paprika, garlic powder, onion powder, cayenne pepper, kosher salt, and black pepper.

2. Bring to a gentle simmer over medium heat, then reduce to medium-low. Cook, stirring occasionally, 10–15 minutes until glossy and slightly thickened; the sauce should coat the back of a spoon.

3. Remove from heat and let stand 5 minutes; it will thicken a bit more as it cools. Adjust to taste for heat, tang, and saltiness if needed.

4. Use warm to coat hot, cooked wings (about 1–1.5 cups for 2–3 lb wings), or cool completely and refrigerate in a sealed jar up to 1 week.

Spicy BBQ wing sauce delivers a sticky, glossy glaze that clings tightly to crisp wings. It balances tangy vinegar and tomato brightness with molasses-tinged sweetness and a smoky backbone, then lifts everything with real chili heat. The texture is smooth and lacquer-like so it coats evenly without pooling, making every bite sweet, tangy, smoky, and spicy all at once.

This style of sauce sits at the intersection of American barbecue traditions and the wing culture that grew from Buffalo, New York. Classic barbecue sauces evolved regionally, with tomato‑molasses Kansas City–style sauces becoming the go-to glaze for sweet, sticky ribs and chicken. As wings became a national bar snack, cooks began spiking those familiar BBQ bases with hot sauce and cayenne, creating a spicy BBQ wing sauce that brings barbecue depth and Buffalo-inspired heat to game days, cookouts, and backyard fry-ups.
