Edam cheese is a semi-hard Dutch cow’s milk cheese named after the town of Edam. It has a pale yellow interior, a mild nutty flavor, and a slightly salty finish. Young Edam is supple and sliceable with small, round eyes, while aged versions become drier, firmer, and more pronounced in flavor. Exported wheels are often coated in distinctive red wax, which protects the cheese and extends shelf life.
Thanks to its modest fat content and gentle melt, Edam holds shape when heated yet still softens pleasantly, making it versatile for sandwiches, baked dishes, and cheese boards. It slices and cubes cleanly, pairs well with fruit and cured meats, and is a popular everyday table cheese in many cuisines.
