Kulfi is a traditional Indian frozen dessert made by slowly reducing milk with sugar and aromatics until thick, then freezing it in molds, often on sticks. The slow reduction caramelizes milk sugars and concentrates milk solids, creating a dense, creamy texture with minimal air compared to Western ice cream. Common flavorings include cardamom, saffron, pistachio, almond, and mango, and the base can range from simply reduced milk to versions enriched with khoya or condensed milk.
Sold as pops, unmolded cones, or sliced discs, kulfi is celebrated for its rich, milky sweetness and pronounced flavor. It’s frequently served on its own, garnished with chopped nuts, or paired with falooda (thin vermicelli), rose syrup, and basil seeds for a classic street-side treat. Its low overrun and slow melt make it ideal for composed dessert plates and outdoor service in warm weather.
