Originating in the Duchy of Savoy, the style spread through Italy and France as savoiardi and boudoir biscuits and is now common worldwide. Commercial producers whip eggs and sugar, fold in flour, pipe the batter, dust with sugar, and bake, then dry to reduce moisture and improve soak retention.
