Liquid nitrogen is nitrogen gas chilled to its cryogenic liquid state at around −196°C (−321°F). It is colorless, odorless, and inert, boiling vigorously at room temperature and rapidly evaporating back into the atmosphere as harmless nitrogen gas. In professional kitchens and bars, it is valued not for flavor but for its intense cold, enabling textures and presentations that are otherwise difficult to achieve.

Cooks use liquid nitrogen to flash-freeze purees, create ultra-smooth ice creams, powder delicate herbs, and shatter aerated confections for dramatic plating. Because it is extremely cold, it must be handled with proper protective gear and vented containers; it should never be sealed or consumed in liquid form. When used appropriately, it functions as a transient processing aid, leaving no taste or residue in the final dish.
