Oyster crackers are small, pale, puffy round or hexagonal crackers with a crisp, brittle bite. Their flavor is lightly salty and toasty, and they float briefly in hot liquids before softening; cooks also crush them into crumbs for breading or binding. Sold in small packets or bulk boxes, they come salted or unsalted and sometimes seasoned.
They emerged in 19th-century American bakeries alongside saltines and became a staple for New England oyster stews and chowders, then spread nationwide with seafood houses and lunch counters. Today they remain a common soup garnish across the United States.
