Quick-cooking oats are rolled oats that have been steamed longer and pressed thinner, often with the flakes cut into smaller pieces. This extra processing shortens cook time to just a few minutes while keeping the mild, nutty flavor of oats. They are distinct from old-fashioned rolled oats, which are thicker and chewier, and from instant oats, which are precooked and typically cut even finer.
Their delicate texture makes them ideal for fast stovetop or microwave oatmeal, overnight oats, and baking where quick hydration is helpful. In batters, they disperse evenly and help retain moisture; in savory mixes, they absorb juices and act as a gentle binder. Use roughly 1 part oats to 2 parts liquid; 1/2 cup dry yields about 1 cup cooked. Store airtight in a cool, dark place to protect the natural oils from turning rancid.
