Mushroom And Swiss Chard Frittata
Ingredients
- 2 tbsp olive oil
- 1 tbsp unsalted butter
- 8 ounces cremini mushrooms – sliced (~12.5 medium cremini mushrooms)
- 1 each shallot – finely chopped
- 10 ounces Swiss chard – stems and leaves separated; stems chopped, leaves coarsely chopped
- 2 cloves garlic – minced
- 1/2 tsp thyme – leaves stripped and chopped
- 8 large eggs
- 1/4 cup whole milk
- 1/2 cup Parmigiano-Reggiano – finely grated
- 1 tsp kosher salt
- 1/2 tsp black pepper – freshly ground

Instructions

Heat the oven to 375°F with a rack in the middle; have a 10-inch oven-safe nonstick or cast-iron skillet ready.

Prep the produce: slice the mushrooms, finely chop the shallot, separate the Swiss chard stems from leaves (chop stems and coarsely chop leaves), and mince the garlic; finely grate the Parmigiano-Reggiano.
