South Carolina Mustard Sauce

Instructions

  1. 1.

Whisk the yellow mustard, apple cider vinegar, light brown sugar, honey, kosher salt, ground black pepper, and cayenne pepper together in a small saucepan until smooth.

  2. 2.

Set over low heat and bring to a gentle simmer, stirring occasionally, 3–5 minutes, until the sugar dissolves and the sauce looks glossy and slightly thickened.

Remove from heat and let cool to room temperature, about 20 minutes. Transfer to a jar, then refrigerate or use immediately with pork or chicken.

South Carolina Mustard Sauce is a tangy, sweet-heat barbecue sauce with a bold mustard backbone and a peppery finish. Its golden color and silky texture cling beautifully to pulled pork, ribs, and grilled chicken, adding brightness without the heaviness of tomato-based sauces. The balance of vinegar snap and brown sugar warmth makes it versatile as a mop, finishing sauce, or table condiment.

Rooted in the Midlands and Lowcountry of South Carolina, this sauce reflects the culinary imprint of German immigrants who favored mustard in their cookery. Over time it became a hallmark of local barbecue—especially alongside whole-hog and pork shoulder—earning the nickname “Carolina Gold.” Though variations exist from pit to pit, the core identity remains a mustard-forward, vinegar-bright sauce that defines the region’s barbecue personality.
