      Tupelo honey barbecue sauce

      Instructions

      1. 1.

Whisk the ketchup, Tupelo honey, apple cider vinegar, water, tomato paste, yellow mustard, and Worcestershire sauce together in a medium saucepan.

      2. 2.

Stir in the smoked paprika, chili powder, garlic powder, onion powder, black pepper, cayenne pepper, and kosher salt until evenly combined.

      3. 3.

Bring to a gentle simmer over medium heat, then reduce to low and cook, stirring often, until glossy and slightly thickened, 12–15 minutes, or until the sauce coats the back of a spoon.

      4. 4.

Remove from heat and whisk in the unsalted butter until melted and the sauce is smooth.

      5. 5.

Let cool 10 minutes, then taste and adjust salt if needed. Use warm as a glaze or dip, or cool completely and refrigerate in a sealed jar for up to 2 weeks. For grilling, brush on during the last 5–10 minutes of cooking to prevent burning.

Tupelo honey barbecue sauce is a smooth, tangy-sweet, and lightly smoky tomato-based sauce that shines with the clean, buttery-floral character of Tupelo honey. Its texture is glossy and clingy, making it ideal for glazing grilled chicken, ribs, or wings, while still balanced enough for dipping and drizzling. The honey’s delicate aromatics soften the acidity of vinegar and tomato, yielding a rounded finish with gentle heat instead of a sharp bite.

This sauce draws from the long tradition of American Southern barbecue sauces that layer tomato, vinegar, and spices for depth and balance. Honey has featured in barbecue sauces for generations, but Tupelo honey—harvested from the white tupelo tree along river swamps of the Florida–Georgia Gulf Coast—has been prized for its unique flavor and resistance to crystallization. As regional ingredients gained broader recognition, cooks began spotlighting Tupelo honey in sauces where its nuances are most noticeable, creating a distinctive regional expression within a classic American style.
