French Beef Stew
Ingredients
- 1 1/2 pounds boneless beef chuck – cut in 2-inch cubes
- 1 small onion – sliced
- 1 cup dry red wine
- 2 tablespoons oil
- 1 small bay leaf
- 4 sprigs parsley
- 1/2 teaspoon salt
- 1/4 teaspoon thyme
- 1/8 teaspoon pepper
- 1 medium clove garlic – minced
- 2 tablespoons butter or margarine
- 1 tablespoon flour
- 3/4 cup beef broth
- 1 cup mushroom – sliced

Instructions

In a deep bowl, combine beef, onion, wine, oil, bay leaf, parsley, salt, thyme, pepper and garlic; let marinate 4 hours.
- 2.
Remove meat from marinade; pat dry; strain and reserve marinade.
- 3.
In a Dutch oven or large heavy saucepan, heat butter or margarine and brown beef cubes well.
- 4.
Sprinkle with flour; cook and stir 3 minutes.
- 5.
Stir in beef broth and the reserved marinade.
- 6.
Bring to a boil; reduce heat; cover and simmer 2 hours.
- 7.
Add mushrooms; simmer 45 minutes or until beef is tender.
- 8.
Serve with noodles or boiled potatoes.
