Grappa is an Italian pomace brandy distilled from the skins, seeds, and stems left after winemaking. Typically bottled clear and unaged, but also produced in aged versions (vecchia/riserva) with golden hues, it ranges roughly from 37.5% to 60% ABV. Styles vary by grape variety and production method, yielding aromas from floral and grapey to herbal, nutty, or peppery, with wood-derived vanilla and spice in barrel-aged expressions.
Traditionally enjoyed neat as a digestif, grappa also features in caffè corretto (espresso “corrected” with a splash of spirit) and can be used for deglazing, flambéing, or perfuming fruit and desserts. Quality is driven by fresh, clean pomace and careful distillation; protect the bottle from heat and light, and serve cool in a tulip glass to concentrate its aromatics.
