Nonpareils are tiny, round sugar decorations formed as hard, pinhead-size beads. They deliver a quick, crackly crunch and neutral sweetness, used to decorate cookies, cakes, and ice cream, or to rim glassware; sold in multicolor mixes and single-color jars. They hold shape under brief baking as a topping but can bleed color or sink when mixed into wet batters.
The name is French for 'without equal' and the confection took root in European pastry work before spreading globally. Modern makers build the spheres by panning layers of sugar syrup over fine seed crystals or starch cores in rotating drums, then drying and glazing.
