Ingredients

  • 1 pounds strawberrieshulled (~40 medium strawberries)
  • 1/2 cups granulated sugar (100g)
  • 1/8 teaspoons fine sea salt
  • 6 cups cold water
  • 2 tablespoons lime juicefreshly squeezed

Instructions

    Rinse the strawberries and remove the hulls.

    In a medium bowl, toss the hulled strawberries with the sugar and salt. Let stand until glossy and juicy, about 10 minutes.

    Transfer the strawberries and their juices to a blender with 3 cups of the cold water. Blend on high until completely smooth, 30–45 seconds.

    Pour the puree through a fine-mesh sieve into a large pitcher, pressing to extract as much liquid as possible; discard the seeds and pulp.

    Stir in the remaining 3 cups cold water and the lime juice until evenly combined.

    Refrigerate until cold, 10–20 minutes.
