Agua De Limón Con Chía
Ingredients
- 8 cups water
- 3 tbsp chia seeds
- 3/4 cup granulated sugar (150g)
- 1 cup lime juice – freshly squeezed
- ice cubes – for serving

Instructions

In a small bowl, whisk the chia seeds with 0.5 cup of the water and let stand 10–15 minutes, stirring once or twice, until the seeds are swollen and suspended in a light gel.

In a large pitcher, combine the granulated sugar with 2 cups of the water and stir until completely dissolved, 1–2 minutes.

Stir in the freshly squeezed lime juice.

Loosen the chia gel with a fork and add it to the pitcher, stirring to distribute evenly.

Add the remaining water (about 5.5 cups). Taste and adjust with a little more water if the drink is too tart. Refrigerate until well chilled, at least 30 minutes.

Stir the pitcher to re-suspend the chia, then pour into glasses over ice cubes and serve immediately.
